Company Overview: Saltare is a boutique winery in Stellenbosch, South Africa. Owner and winemaker Carla Pauw carefully selects grapes from five different vineyards across the Western Cape (Stellenbosch, Swartland, Robertson) and transports them to our cellar in Stellenbosch where she applies her art. Carla is passionate about Champagne and Cap Classique, and has a great appreciation for the Swartland's old vines, especially Chenin blanc and Syrah.
